I saw this recipe yesterday for Emeril's Poached Eggs Over Crispy Stuffing Cakes With Herbed Gravy and I thought, "I can do that, only I can make it less complicated!) So I did!
When I make Thanksgiving dinner I usually make a TON of stuffing. This year was no exception. We baked 4 loaves of gluten free bread and I made a big pan of stuffing that I baked for the last hour along with the turkey. I then sliced and heated the stuffing for this dish.
While the stuffing was warming I also heated up some gravy and then cooked two eggs over easy. This whole dinner took less than 15 minutes to make and was delicious! Just what I needed after the hard work of cooking Thanksgiving dinner.
