A Meal for a Cold and Blustery Day #Gluten Free



It's the first snow storm of the season and I wanted something warm and comforting to eat. I decided to use up the last of the corned beef that I bought on sale in March and make some colcannon to go with it.

I love to cook with beer and when Ryan was first diagnosed with a gluten sensitivity I was worried that I would not be able to do that anymore since beer contains gluten. But, guess what? I was wrong! There are two gluten free beers that are available in my area, Redbridge and Bard's, and I have been using both since I found them.

Corned Beef
1 corned beef
1 bottle of gluten free beer
2 C water

Place all ingredients (including spice packet from corned beef) into slow cooker and cook on high 5 to 6 hours. Let sit for 10 minutes then slice and serve

Colcannon
4 -5 large potatoes
1/2 medium head of cabbage
3 slices of cooked bacon, crumbled
4 green onions, sliced

Colcannon is mashed potatoes and cabbage. Everyone has their own way of making mashed potatoes so do what you like best! Mash the potatoes and cabbage together with your favorite ingredients. Add bacon and green onions. Enjoy!
