I have been making chocolate pecan pie every holiday since I can't remember. It's tradition in this house. This is the first year we did it gluten free.
Crust (makes 2 crusts)
2 1/2 C gluten free flour (we use Better Batter)
1/2 tsp salt
1 C butter, chilled and cut into cubes
3/4 C ice water
Place flour salt and butter into food processor and pulse until mixture resembles coarse meal. Slowly add ice water until dough comes together (you may not need the entire 3/4 Cup). Pat dough into disc, cover with plastic wrap and place in freezer for 30 minutes.
Roll out and place in pie pan. Add pecan pie mixture. Bake at 350 degrees for 1 hour.
Pecan Pie Filling
6 eggs, beaten
2 C corn syrup
2 C white sugar
1/2 C butter, melted
2 tsp vanilla extract
2 C pecans
1 C milk chocolate chips
